Algunos de los peligros del almacenamiento de alimentos en un restaurante son:

  1. Enfermedades transmitidas por los alimentos: Si los alimentos no se almacenan adecuadamente, bacterias como Salmonella, E. coli y Listeria pueden crecer y causar enfermedades transmitidas por los alimentos en los clientes que consumen alimentos contaminados.
  2. Contaminación cruzada: Almacenar diferentes tipos de alimentos juntos puede provocar contaminación cruzada, en la que las bacterias dañinas de un alimento se propagan a otro, aumentando el riesgo de enfermedades transmitidas por los alimentos.
  3. Deterioro: El almacenamiento inadecuado puede hacer que los alimentos se estropeen más rápidamente, lo que provoca desperdicios y posibles pérdidas económicas para el restaurante.
  4. Calidad de los alimentos: Un mal almacenamiento de los alimentos también puede provocar una pérdida de calidad, sabor y valor nutricional de los mismos.
  5. Infracciones del código sanitario: El incumplimiento de las normas de almacenamiento de alimentos puede dar lugar a infracciones del código sanitario y consecuencias legales para el restaurante.

ESTADÍSTICAS

  • Los Centros para el Control y la Prevención de Enfermedades (CDC) calculan que cada año enferman en Estados Unidos 48 millones de personas por ingerir alimentos contaminados, lo que provoca 128.000 hospitalizaciones y 3.000 muertes. La Agencia de Salud Pública de Canadá (PHAC) calcula que cada año unos cuatro millones de canadienses contraen una enfermedad transmitida por los alimentos, lo que provoca unas 11.600 hospitalizaciones y 238 muertes.
  • Los Centros para el Control y la Prevención de Enfermedades (CDC) y la Agencia de Salud de Canadá (PHAC) estiman que cada año, 1 de cada 6 estadounidenses y 1 de cada 10 canadienses enferman a causa de enfermedades transmitidas por los alimentos.
  • Según las estadísticas anuales sobre seguridad alimentaria que realiza periódicamente el Consejo Internacional de Información sobre la Alimentación (IFIC), al 29% de los consumidores lo que más les preocupa es la contaminación química de los alimentos, que puede acarrear problemas de salud a largo plazo o enfermedades crónicas. La segunda mayor preocupación son las enfermedades de origen bacteriano transmitidas por los alimentos, que acaparan el 26%.
  • Los informes muestran que al menos entre el 1,1% y el 10,8% de la población mundial está afectada por alergias alimentarias.
  • 1 de cada 10 trabajadores en el mundo enferma cada año a causa de alimentos contaminados.
