HECHOS 

  1. Una alergia alimentaria es una condición médica en la que la exposición a un alimento desencadena una respuesta inmunitaria perjudicial. La respuesta inmunitaria, denominada reacción alérgica, se produce porque el sistema inmunitario ataca a las proteínas del alimento que normalmente son inofensivas. Las proteínas que  desencadenan la reacción se llaman alérgenos. 
  2. Los síntomas de una reacción alérgica a los alimentos pueden ser desde leves (picor de boca, algunas ronchas) hasta graves (opresión de garganta, dificultad para respirar). 
  3. La anafilaxia es la reacción a los alérgenos más grave que existe. La anafilaxia es una reacción alérgica de todo el cuerpo que pone en peligro la vida y que puede dificultar la respiración, provocar un descenso drástico de la presión arterial y afectar al ritmo cardíaco. La anafilaxia requiere un tratamiento médico inmediato, que incluye  una inyección de epinefrina y un viaje a la sala de emergencias de un hospital. Si no se trata adecuadamente, la  anafilaxia puede ser mortal. 
  4. Las alergias alimentarias no deben confundirse con las intolerancias alimentarias, que son desagradables pero no amenazantes. 
  5. Se han registrado más de 170 alimentos que provocan reacciones alérgicas. 
  6. Ocho de los principales alérgenos alimentarios -leche, huevo, cacahuete, frutos secos, trigo, soja, pescado y marisco- son responsables de la mayoría de las reacciones alérgicas alimentarias graves en Estados Unidos.

ESTADÍSTICAS 

Los investigadores calculan que 32 millones de estadounidenses tienen alergias alimentarias, entre ellos 5,6 millones  de niños menores de 18 años. Eso es uno de cada 13 niños, o aproximadamente dos en cada aula. 

Los estudios publicados en 2018 y 2019 estiman el número de estadounidenses de todas las edades que tienen  síntomas convincentes de alergia a alimentos específicos: 

  • marisco: 8,2 millones 
  • leche: 6,1 millones 
  • cacahuete: 6,1 millones 
  • frutos secos: 3,9 millones 
  • huevo: 2,6 millon
  • pescado de aleta: 2,6 millones ▪ trigo: 2,4 millones 
  • soja: 1,9 millones 
  • sésamo: 0,7 millones 

Las alergias alimentarias van en aumento

  • Los Centros para el Control y la Prevención de Enfermedades informan de que la prevalencia de la alergia  alimentaria en los niños aumentó un 50% entre 1997 y 2011.
  • Entre 1997 y 2008, la prevalencia de la alergia a los cacahuetes o a los frutos secos parece haberse triplicado  con creces en los niños estadounidenses. 
  • Las reacciones de alergia alimentaria son graves y pueden poner en peligro la vida. 
  • Cada tres minutos, una reacción alérgica a los alimentos envía a alguien a la sala de emergencias.  
  • Cada año en EE.UU., 200.000 personas requieren atención médica de urgencia por reacciones alérgicas a los  alimentos. 
  • Las hospitalizaciones infantiles por alergia alimentaria se triplicaron entre finales de la década de 1990 y  mediados de la década de 2000.
