  1. La contaminación cruzada en los alimentos es una de las principales vías de propagación y multiplicación de las bacterias. Se produce cuando los jugos o gérmenes de otros alimentos tocan los alimentos cocinados. 
  2. La contaminación cruzada de los alimentos puede provocar una intoxicación alimentaria, lo que hace que la persona se sienta considerablemente mal. 

Los síntomas incluyen:

  • Vómitos y náuseas
  • Diarrea
  • Calambres estomacales
  • Temperatura elevada
  • Dolores corporales
  • Escalofríos corporales
  1. Por lo general, los síntomas de la intoxicación alimentaria desaparecen al cabo de una semana, pero es importante permanecer en casa descansando y recuperándose hasta que los síntomas hayan desaparecido por completo. Siga bebiendo mucha agua, descansando y comiendo pequeñas cantidades de alimentos suaves, para asegurarse de que su estómago no se desestabiliza más.
  2. La Salmonella, el Campylobacter y la Escherichia coli enterohemorrágica son algunos de los patógenos de transmisión alimentaria más comunes que afectan a millones de personas cada año, a veces con resultados graves y mortales. 
  3. La infección por Listeria provoca abortos en mujeres embarazadas o la muerte de recién nacidos. Aunque la incidencia de la enfermedad es relativamente baja, las consecuencias sanitarias graves y a veces mortales de la listeria, sobre todo entre los lactantes, los niños y los ancianos, la sitúan entre las infecciones de origen alimentario más graves.

ESTADÍSTICAS

  • Los alimentos inseguros que contienen bacterias, virus, parásitos o sustancias químicas nocivas causan más de 200 enfermedades, desde la diarrea hasta el cáncer.
  • Se calcula que 600 millones de personas -casi 1 de cada 10 en el mundo- enferman tras consumir alimentos contaminados y 420.000 mueren cada año, lo que supone la pérdida de 33 millones de años de vida saludable (AVAD).
  • Cada año se pierden 110.000 millones de dólares en productividad y gastos médicos derivados de alimentos inseguros en los países de ingresos bajos y medios.
  • Los niños menores de 5 años soportan el 40% de la carga de enfermedades transmitidas por los alimentos, con 125 000 muertes al año.
  • Las enfermedades diarreicas son las más comunes derivadas del consumo de alimentos contaminados, causando 550 millones de enfermos y 230 000 muertes cada año.
  • Los alimentos inseguros suponen una amenaza para la salud mundial, poniendo en peligro a todo el mundo. Los bebés, los niños pequeños, las mujeres embarazadas, los ancianos y las personas con enfermedades subyacentes son especialmente vulnerables. Cada año 220 millones de niños contraen enfermedades diarreicas y 96 000 mueren. Los alimentos inseguros crean un círculo vicioso de diarrea y malnutrición, amenazando el estado nutricional de los más vulnerables.
