  1. Los cuchillos, ralladores y otros utensilios de cocina afilados pueden provocar lesiones.
  2. Levantar, transportar, empujar o halar cargas pesadas puede poner a los trabajadores en riesgo de sufrir lesiones graves.
  3. Cuando una persona coge objetos por encima de la altura de los hombros, su espalda se arquea y sus brazos actúan como largas palancas. Esto hace que la carga sea difícil de controlar y aumenta significativamente el riesgo de lesiones. 
  4. Cuando una persona se cae por un resbalón o un tropezón, las lesiones pueden ser desde leves (magulladuras y raspones) hasta más graves, como fracturas de huesos o traumatismos craneales. La gravedad de la lesión dependerá de las circunstancias.
  5. Una fuente habitual de quemaduras, escaldaduras y golpes de calor son las superficies de cocina calientes, los líquidos hirvientes y los niveles de temperatura elevados en el trabajo.
  6. Respirar grandes cantidades de polvo de harina es un riesgo para la salud de los trabajadores.

ESTADÍSTICAS

  • Según la Oficina de Estadística Laboral (B.L.S.), los principales tipos de lesiones en la industria manufacturera son los esguinces, las torceduras y los desgarros musculares. Estas lesiones causaron una media de 10 D.A.F.W. en 2017. En las plantas de fabricación de pan y bollería, las lesiones D.A.F.W. más comunes implican la espalda y las manos de los empleados. En 2017, el B.L.S. registró 790 lesiones en la espalda y 500 en las manos en las panaderías. Estos son también los puntos de dolor más comunes en las operaciones de snacks.
  • Cada año, hasta 600 millones de personas en todo el mundo -casi 1 de cada 10- caen enfermas tras consumir alimentos contaminados por bacterias, virus, parásitos, toxinas y productos químicos, según la O.M.S. Asimismo, los Centros para el Control y la Prevención de Enfermedades (C.D.C.) del Departamento de Salud y Servicios Humanos de Estados Unidos afirmaron que las enfermedades transmitidas por los alimentos son una importante carga para la salud pública en Estados Unidos, ya que se calcula que 1 de cada 6 estadounidenses (o 48 millones de personas) enferma cada año. De ellos, 128.000 son hospitalizados y 3.000 mueren. Según el Center for Science in the Public Interest (C.S.P.I.), una organización de defensa del consumidor con sede en Washington, los productos de panadería se asociaron a 142 brotes de enfermedades y 2.822 dolencias.
  • Las enfermedades transmitidas por los alimentos están causadas por 31 patógenos conocidos y agentes no especificados. Muchos de estos patógenos son rastreados por los sistemas de salud pública que siguen las enfermedades y los brotes. Los agentes no especificados son aquellos de los que no se dispone de datos suficientes para estimar la carga específica del agente; los agentes conocidos que aún no han sido identificados como causantes de enfermedades transmitidas por los alimentos; los microbios, productos químicos u otras sustancias de las que se sabe que están en los alimentos y cuya capacidad para causar enfermedades no está probada; y los agentes aún no identificados.
