  1. Las quemaduras pueden producirse cuando el agua o el aceite hirviendo entran en contacto con la piel, pero también pueden producirse cuando los miembros del personal descuidan el uso de guantes de protección para el horno. Los cortes pueden producirse cuando los cuchillos sin filo que se utilizan para cortar alimentos resbalan y causan lesiones en manos y dedos.
  2. Los suelos de las cocinas suelen ser lisos para facilitar su limpieza. Sin embargo, esta característica práctica puede convertirse en un peligro importante cuando el agua, el aceite y otras sustancias resbaladizas se derraman inevitablemente en el transcurso de un día de trabajo.
  3. Los incendios pueden producirse en cualquier lugar de una cocina. Desde enchufes sobrecargados hasta el derrame de aceite sobre quemadores calientes o en el interior de hornos, las cocinas conllevan un riesgo de lesiones por incendio.
  4. Las cocinas comerciales albergan una gran variedad de combustibles peligrosos, líquidos inflamables y gases que pueden causar daños catastróficos, lesiones graves y la muerte.
  5. Los accidentes suelen deberse a una supervisión, capacitación o gestión inadecuadas.

ESTADÍSTICAS

  • Los tropiezos y las caídas representan el 16% de todas las lesiones laborales en el sector de la restauración y se producen en el mismo nivel. Con más de 500.000 accidentes laborales al año y un 6% en el sector de la restauración, conocer los peligros potenciales y cómo evitarlos podría evitarle a usted o a uno de sus compañeros un daño innecesario.
  • Según la NFPA, aproximadamente el 61% de todos los incendios en restaurantes fueron causados por la cocina, siendo los equipos o materiales de cocina los elementos que con más frecuencia se encendieron inicialmente y, por tanto, la causa del incendio. Esto supone tres de cada cinco incendios y el 38% de los daños materiales directos.
  • Aproximadamente el 22% de estos incendios se debieron a fallos en la limpieza, el 14% a fallos eléctricos o averías, el 12% a fallos mecánicos o averías y el 8% a equipos desatendidos.
  • Las freidoras estuvieron implicadas en uno de cada cinco incendios (21%), los hornillos o placas de cocina en el 14% de los incendios, las parrillas en el 6% y los hornos o asadores en el 5%.
  • Según la Oficina de Estadísticas Laborales (BLS), el 31% de las lesiones registradas en establecimientos de restauración se saldaron con días de baja laboral.
  • Una de las mayores áreas de mejora en muchas cocinas es la gestión del aceite. Según un estudio de Restaurant Technologies realizado por un importante proveedor de seguros, un impresionante 60% de los incidentes de indemnización por accidentes laborales en restaurantes están relacionados con la manipulación del aceite de cocina, ya sean quemaduras, resbalones y caídas o torceduras de espalda.
